9800's will basically be two gpu's in one.
If you must use SLI, you'll need a nice Nvidia chipset board.
By the sounds of it, you're going for a gaming pc. You can ditch the ddr2-1066 and just get 8gb of ddr-800 and oc it yourself.
With Vista 64... expect numerous compatibility issues with older software and such. I just built my computer, and I went with Vista 32 as I didn't want to run into 64-bit related compatibility issues.
