Well you can takes this a lot of ways, when Saber said she'll slumber for a bit longer you could take that as dying, yet.... (which also happens to probably be the most rational explanation)
or you can take it as if Type_Moon (the company who makes FSN) will permit me to say, signal a continuation of the series by having Saber in slumber until the next summoning through the holy grail, but that's not very likely.
But the ending here is open-ended, for the pragmatist and those who like a little bit of reality, I suppose you could say Saber died...
on the other hand, for aracelais, me, and buncha other people absolutely refuse to accept that fact
well, we can only hope for a continuation of her dream!
which would lead to another season!
