Hm. These 5 are probably my favorite.. and in no specific order:
Karin
Bamboo Blade
Vampire Knight
Amatsuki
Elfen Lied

EDIT: I'm gonna list more I like! Because I can! whoo.
I liked Death Note's as well. (The first 19 or whatever. The second half's was funny, but I didn't overly like it)
And Chobits was pretty cool.
Goshuushou-sama Ninomiya-kun has a pretty neat one. Catchy song.
Nabari No Ou's isn't too bad either.

Just wanted to add some others I thought were pretty decent.

Why these?? I'm a fan of Maximum the Hormone to begin with... Been a fan of their whole album BuiikiKaesu.
Lucky Star's opening simply for the upbeat, disgustingly catchy, well-fitting tune.
